Hartmann Maragogype Natural (60%)
Finca Hartmann is a second-generation, family-run farm located in Santa Clara, Chiriqui, Panama. The farm spans 60 hectares and employs 43 people dedicated to producing high-quality coffee. The Hartmann family is renowned for their dedication to sustainable coffee cultivation, using shade-grown methods beneath native rainforest trees. Only the ripest cherries of this Maragogype are selected for sun-drying on African raised beds, where they remain for approximately 18 days until reaching 11% humidity.
Ortiz Falla Washed Gesha (40%)
This Gesha was produced by Einar Ortiz Falla in Tolima, Colombia. While Panama is still considered the home of Gesha, Colombia has quickly emerged as a strong contender since the varietal’s introduction to the region in 2010. Einar, born into a family of coffee growers, has dedicated his career to improving quality and was therefore well-positioned to embrace the introduction of Gesha to his country.
Grown under the shade of Guamo and Cambulo trees, this Gesha undergoes a fully washed process with a 36-hour dry fermentation. The beans are then carefully dried on covered raised patios, ensuring stable conditions that preserve their unique characteristics. Einar’s rigorous approach exemplifies the dedication driving Colombia’s growing reputation in the world of specialty coffee.
