Minas Gerais in Southeastern Brazil is one of the most important regions in Brazil’s Arabica cultivation, producing around 74% of the country’s coffee volume.The region actually produces more coffee than any other country in the world.
A natural solvent, Ethyle Acetate (a derivative of sugar cane), is used in the decaffeination process. Green coffee is soaked, and steamed to make it more porous, then washed in the EA solution to attract and extract the caffeine. The coffee is the soaked and steamed again to remove the EA. After drying and cooling, the coffee is ready for roasting.
