At Finca La Esperanza in Huila, Colombia, Carlos Cerquera employs a careful double fermentation process that sets his Gesha apart. Cherries are harvested at peak ripeness, measured precisely at 22° Brix to ensure optimal sweetness. The cherries then undergo a 40-hour fermentation in a hopper, are pulped, and fermented again for 40 hours in a tank. This extended fermentation method enhances flavour complexity while preserving clarity.
Following fermentation, the coffee is dried parabolically in a greenhouse for 14 days, where it is turned every two hours to ensure even moisture release. This method accentuates the vibrant and intricate character of the Gesha variety.
Gesha has found a second home in Colombia in recent years, where producers like Carlos have embraced its potential. Known for its floral, complex characteristics, Colombian Geshas now consistently rank among the most celebrated coffees in global competitions.
