The red honey process used here strikes a good balance between the clean, floral aromatics of washed lots and the bold, blueberry-like quality of natural Ethiopian coffees.

This coffee comes from Lalesa, the largest processing site in Gedeb, operated by Ephtah. Ephtah works closely with nearby farmers, purchasing ripe cherries and processing them at the site while also investing in local infrastructure and producer support. This includes a daycare centre for farmers’ children and the Ama Commitment scheme, which supports women working in coffee.
