Across the stunning mountain farm in the peaks of the Nariño department, Colombia, coffee is planted down slopes that descend to the river valley, with just a quarter of the estate used for cultivating coffee. The remaining land has been converted into a natural forest reserve by the owner Pablo Guerrero.
Cherries, selectively harvested for ripeness, undergo an initial 20-hour fermentation in pickers' bags, followed by sorting through floatation. Post-depulping, a 24-hour dry fermentation precedes a full wash and second floatation sort. The coffee then dries over 16 days on raised beds.
