Pangoa Catimor

This fully washed Catimor offering is a beautiful example of clean sweet Peruvian coffee.

From the Junin Region of central Peru, this lot is the result of decades of combined skill from around 140 producers. Catimor cherries are collected and undergo unique washed mill processes from the farmers, with ferment times of twelve hours and a final drying stage using tray, solar or mechanical approaches.

Through the training of hundreds of agronomists across twelve different countries and the application of economic, statistical analysis, the project provides close assistance to producers, creating large changes to cultivation-approach. Excitingly, farms have become more productive and financially viable through this scheme, with measurable quality increases season-on-season.
