The Tabi variety was developed in Colombia by Cenicafé, the national coffee research centre, and released in 2002. It is a cross between Typica, Bourbon and Timor Hybrid, designed specifically for Colombia’s climate and terroir. As a result, it is rarely seen outside the country. Andy Llanos Delgado, the producer of this coffee, believed the variety could also thrive in Peru. His experimental approach has clearly paid off, resulting in a remarkably clean, high-quality cup.
