Located in the Juja district of Kiambu county, the Tatu Estate lies approximately 25km from the country’s capital Nairobi. Whilst characterised by undulating plains and rich red volcanic soil, the farm also includes bodies of water contained by purpose-built dams. These collect surface run-off to be used on the estate itself after bi-annual rainy seasons.
SL28, SL34, Ruiri 11, Batian and K7 cherries undergo “wet processing”, with water used right from pulping and fermenting to a final soaking stage. The crop is then dried on tables under the sun until correct moisture is attained, at which point they are stored for milling.
