We give a lot of thought to placing the coffees we source into the right genre. The Bourbon varietal, widely grown across the Americas, is known for its balanced profile, making it a natural fit for our Foundation genre. However, El Mirador Bourbon departs from this typical profile. It has an expressive character marked by a fruity acidity reminiscent of some Kenyan coffees. Given this distinct profile and the small lot size of just 15 bags, we felt it was a great fit for our Rare genre.
Finca El Mirador, meaning “The Viewpoint” in Spanish, earns its name from sitting at 1,850 MASL, overlooking the valley formed by the Utcubamba River and El Palto—a town known for leading the way in Peruvian coffee production. Here, Luis Angel Garcia Guevara and his family cultivate Bourbon trees in sandy loam soil, enriched with organic fertilisers. Luis Angel employs a double fermentation method—cherries are first left to ferment whole for two days before being depulped and fermented again for five more. After fermentation, the beans dry slowly in the sun for up to 15 days. Beyond his own farm, Luis Angel supports neighbouring producers by sharing agronomic techniques, reinforcing a culture of quality across the region.
