Carlos Gallego’s farm, Buena Vista, optimises each level of production with scientific precision. This Castillo lot has undergone Thermal Natural processing, with 36 hours of combined anaerobic and aerobic fermentation, before dehumidification to accelerate the drying process. Within 6 hours moisture is drastically reduced and cherries then move to 150 hours of patio drying.
